Homemade Egg McMuffin Using a Cast-Iron Skillet

Sure, McDonald’s makes Egg McMuffins (and I’m not going to lie, they taste good), but making your own is so much better for you...and cheaper too! Here’s a recipe that your children will love, and it takes about ten minutes to make from start to finish.
Of all the things that McDonald’s makes, their Egg McMuffins is one of the healthier options, but it still has about half of the recommended sodium for the day. It’s also about $3 each, whereas you can make your own, much more delicious and healthier for a fraction of that cost.
When you make your homemade dishes inspired by those you may have had at other restaurants, you get to control the entire process, from the quality products you use to customizing the meal to what your family likes.

And as a mom of four, I find it essential to be budget-conscious, so eating out all the time is not an option. It’s a once in a while treat, and I certainly don’t want to use that option on something like a McMuffin when I can make it so much more delicious and better for my kids.
Homemade Breakfast is Better than Cereal
I love making my kids breakfast. So much so that it’s rare that we have cereal for breakfast. And here’s why.
Breakfast is the most important meal of the day.
After a night of fasting (aka not eating), your body uses breakfast to replenish glucose levels, energize the body, and increase metabolism. In fact, by having breakfast, you increase your fat-burning abilities, and studies show that people that eat breaktfast are more likely to be physically active.
Children in the USA are already at a higher risk of obesity, so prioritizing a healthy start of the day with an excellent delicious breakfast is a form of loving nurturing.

For breakfast, I make sure there’s protein, healthy fat, and also carbohydrate. These delicious Homemade Egg McMuffin meet all of these. And they are a big hit here for my kids!
Ingredients for Homemade Egg McMuffin Breakfast Sandwich
(Makes enough for 4)

Cooking the Bacon: I find that each person likes their bacon anywhere from barely cooked to super crispy. Again, one of the benefits of cooking meals at home is the ability to customize, so cook the bacon how your family likes it.
On a stovetop, preheat your griddle on medium-high. Once thoroughly heated, place the bacon and cook until desired consistency. Set aside on a plate that has a paper towel on it to soak up the excess oil.
Cooking the Eggs: preheat your skillet on medium heat with the olive oil, and reduce to low before cracking your eggs in the skillet. (I make ours with sunny side up eggs since my kids prefer theirs this way.) Add salt and pepper to taste. When the eggs are nearly cooked, you can cover the skillet with a lid until the yolks cook to the desired consistency. My kids like their yolks runny, so I only keep the top on for a minute.
Preparing the English Muffins: toast each muffin before assembling your Homemade Egg McMuffins.
To assemble your Homemade Egg McMuffins:
Place a slice of cheese on each English muffin, then cut a bacon slice in half and place each half on the cheese. Finally, add the egg on top of the cheese. Serve and watch your kids devour these.
A note on Cooking Eggs with Cast Iron
I’ve found that cast iron allows me to have a natural, non-toxic kitchen that is affordable and durable. I cook just about every meal on a cast-iron skillet, griddle, or dutch oven.
